Cake in a Mug MIX

I've had to clean the microwave one two many times, so now I use a 2 cup bowl to make this cake.

1 1/2 cups flour

1 Tbsp baking powder

1 cup sugar

1/4 cup cocoa

1 tsp salt

1/4 cup dry milk powder

mix this all in a covered bowl for storage.  No eggs used ever.


When you want to bake a cake mix in your bowl

1/3 cup mix

1 tsp oil dash vanilla

1 tbsp. and 1 tsp water to make a stiff dough

in a cup combine

2 tbsp. brown sugar

2 tsp cocoa

1/4 cup boiling water

pour over the cake batter in your small bowl.  This turns out like a warm pudding cake.

Microwave this for 2 minutes and I like it hot.

I have added nut, chopped cherries, chocolate chips etc...don't be afraid to experiment.  It is good with whipped cream or ice cream also.

I wonder how it would be using some of those new mint chips...humm

When I'm counting calories/watching my diet, I make myself this on Sunday afternoon after my nap.  Just a reward for making it another week and no left overs to have to finish off.

Besides, hubby doesn't enjoy cake or chocolate.
